This refreshing fruit salad is great for breakfast, snacks or dessert!
In a medium bowl, add gelatin to boiling water and stir until dissolved.
Drain the juice from the can of pineapple chunks and add it to the gelatin.
Add the 6-ounce can of pineapple juice and the lemon juice and stir.
Add the pineapple chunks, strawberries, and banana slices and stir. Sprinkle the top with unsweetened coconut.
Chill until set, at least 4 hours.
